The Art Of Wine Making
At Newbliss Winery it is the art behind our wine that makes it so divine. The combinations of the rich soil, the healthy water, the bright sunlight and wonderful Dwellingup climate that all play an important role in determining the quality of the grapes and ultimately the quality of the resulting wine.
Our grapes are more than often harvested between the months of February and April. The warmer times of the year mean the earlier the grapes will ripen. There are many Different varieties of grapes that ripen at different times, e.g. Chardonnay ripens early whilst Riesling and Cabernet Sauvignon grape ripen later.
Once the juices from our Newbliss grapes have been separated from their stalks and skins Mick and Jo can now begin the process known as FERMENTATION. Fermentation is the process where the grapes sugar is converted into alcohol. This is achieved by adding yeast to the juice. Yeast is used to eat up all the sugar in the juice and produce alcohol. Gas then forms as carbon dioxide as its heated. After converting the sugar to alcohol the yeast cells die and the grapes are now converted to Newbliss Wine.
